As someone who spends half his life with a backpack on his back – whether as a snowboard instructor in Canada, a surfer in the Canary Islands or a Jiu-Jitsu student in London – I quickly realized one thing: healthy, sustainable eating is not as commonplace everywhere as it is at Mom's.

So what should I do to be able to eat good meat on the go without a guilty conscience? The solution wasn't particularly original, but an age-old method: dried meat that makes no compromises in quality and origin – made from organic water buffalo from our own region.

The idea of ​​making high-quality meat available anytime, anywhere through gentle drying dates back thousands of years. People in Europe and America preserved meat by drying it. So why not use this tried-and-tested method in the 21st century instead of buying cheap meat from factory farms?

What began as provisions for the journey became an idea that resonated with people:
